Thomas was born and raised in Strasbourg, France which is where he began his culinary journey. He then honed his skills in London in kitchens such as Hide and The Waterhouse Project. He is currently Hhead Chef at the Princes of Shoreditch where he showcases his style that is a mix of influences, travels, memories and his french heritage.
