Crab fried rice

Bring a large pot of water to the boil, add a pinch of salt, cook the rice until is soft (6m) then strain the rice and cool it down under cold runny water.

Remove the wilted layers from the spring onion, cut them with in small pieces. Wash them in cold water, let the excess of water drain out.

Bring a large saute pan to the stove, once hot drizzle some olive oil , stir fried the rice with the spring onion, season with salt and pepper, add the brown crab meat and stir, then the white crab meat. Mix all together and remove from the stove.

Cut the lemons in half and squeeze the juice over the crab, chop and sprinkle chives over the rice.

200g white crab meat
100g brown crab meat
1 bunch of spring onions
300g of long grain rice
2 lemons
Tabasco
Black pepper in a mill
½ a bunch of chives
Olive oil
Sea salt for seasoning
