TSTS Chelsea is expanding to a larger site and we’re looking for an experienced, passionate general manager for our restaurant.

We want a candidate who lives and breathes hospitality! Top level experience in a notable UK restaurant is expected along with references. You’ll be working closely with the founder of the business to oversee the opening and the day to day running of the new operation, as well as collaborating with the head chef and retail manager on a daily basis. 

Whilst this is essentially a new opening, many of the team are already working at the existing site so your focus will be to build out the front of house team for the new space which will have up to 80 covers throughout the building.

You’ll also implement essential new processes for the day to day operations of the business. Wet sales will be under your management and you’ll have oversight of the drinks list with sales and GP targets to hit.

Hours: 45-50/ week

DUTIES INCLUDE:

• Recruitment and training (FOH)
• Implementing new service systems 
• Staff budgeting and HR management 
• Rota management
• Payroll and banking working with our accounts team
• Oversight of general health and safety procedures 
• Wet stock and supplier management (assisted by experienced AGM) 
• Guest relations 

REQUIREMENTS:

• At least 2 years experience managing a notable UK restaurant with proven results 
• An excellent understanding of wines, cocktails and non-alcoholic beverages 
• Experience in recruiting, training, managing and incentivising a team, again with proven results 
• At least 2 years continuous work with one of your last 2 employers
• Fluency in English (a second language is advantageous due to the international nature of the clientele)
• A UK work permit or passport 

We’re looking for a fishmonger to join our team. Whilst we value passion over experience at TSTS, this role does require some background working as a fishmonger or at least having intricate knowledge of British fish and seafood. The successful candidate will have excellent knife skills and be familiar and proficient with all forms of fish preparation across the full range of species.

We also expect great customer service skills with the ability to make recommendations as well as service the specific requirements of our private chef customers. Former chefs who have worked in a seafood focused restaurant may have a suitable experience. Most importantly we’re looking for a team player to fit in with our close-knit crew, leaving ego at the door and offering support to colleagues across both retail and restaurant departments.

TSTS can be a busy and bustling space so organisation and self-management are key to ensuring processes are adhered to and standards upheld.

You’ll be working with some of the best fish and seafood in the country, much of it coming from our sourcing operation Looe and direct from fishermen, producers and aquaculture farms across the country; you’ll need to manage orders and relationships with these suppliers as well as keep a tight hold on stock and quality management.

You’ll report to the Retail Manager but will also have regular contact with the Restaurant General Manager, Head Chef and the company Founder/CEO. 

DUTIES INCLUDE:

• Setting up and clearing down displays
• Managing stock records and quality checking
• Ordering from set suppliers
• Serving a range of customers and managing accounts 
• Preparing fish for orders
• Liaising with the kitchen over stock transfers and up-cycling 

REQUIREMENTS:

• At least 12 months experience as a fishmonger with a notable UK company or extensive experience working with fish in another relevant role 
• Excellent customer service skills 
• At least 2 years continuous work with one of your last 2 employers 
• Fluency in English (a second language is advantageous due to the international nature of the clientele) 
• A UK work permit or passport

We’re looking for new front of house members to join our growing team. We value passion over experience at TSTS as training can be given in-house but we are looking for people who have a natural gift for hospitality.

A keen interest in food and drink is a must and we’re looking for candidates who keep a finger on the pulse of London’s great dining scene.

Most importantly you’ll be a team player, ready and willing to support your colleagues across FOH, kitchen and retail departments as and when required. TSTS is a happy place to work and we’re looking for you to bring the same energy and commitment as the rest of this close-knit team.

DUTIES INCLUDE:

• Hosting and checking in guests 
• Serving customers in the seafood bar, on the sunny terrace and first floor bistro
• Making drinks including coffee and cocktails (training will be provided)
• Running plates - whilst there is a food lift, to service both floors sometimes running food and drinks up the stairs will be required 
• Upholding hygiene and health hand safety standards at all times 

REQUIREMENTS:

• At least 2 years experience working in a similar role in a notable UK restaurant 
• A working knowledge of current food and beverage trends
• Experience making coffee and/or cocktails is advantageous 
• At least 2 years continuous employment in one of your last 2 roles 
• Fluency in English, a second language is beneficial 
• A UK work permit or passport
