Tiger Prawns cooked on Salt

Don’t peel the prawns.
Take a large saute pan, cover the bottom with sea salt, take to the stove to heat it up once hot add the prawns skin side down. Once the colour has changed on the side touching the salt flip them and repeat process.
Serve in the pan with the baby gem tossed with some olive oil.
