This cut sits next to the otoro. It has an incredible balance of richness and firm texture. A gentle and consistent marbling produces buttery flavours while still preserving the meatiness of a leaner cut.

Our Mediterranean tuna is caught wild and then finished in pens at sea. The whole practice is closely regulated for maximum sustainability, top quality and total traceability.
