Born into an Italian family in London, Bibo discovered his passion by watching his mother and grandmother cook. His journey began at the renowned French artisanal bakery, Poilane, where he honed his baking skills and left with a burning commitment to preparing food with precision and dedication.

In 2019, he embarked on a new chapter by joining the now two Michelin starred Ikoyi London, under the guidance of Chef Jeremy Chan. It was here that Bibo discovered a passion for spices and how to master the art of leveraging their subtle complexities. Today, he draws inspiration from his Italian roots, seamlessly blending traditional techniques with more advanced methods. Bibo will aim to highlight the simplicity and beauty of ingredients, allowing their essence to shine through.
