Lemon sole live on the sea floor eating small fish and crustaceans. They are quite abundant. Our fishermen use targeted nets without dredging to have a lesser impact on the sea floor and surrounding ecosystem. The smaller boats we buy from are able to return any undersized fish or bycatch fish unharmed to live another day.
