During this time, or when the weather keeps our day boats inshore, we source the best quality, sashimi grade bass from farms in France. Either Cannes or Corsica
When selecting farmed fish we only buy from the best farms. Farms that focus on fish quality and welfare, low carbon emission, high quality feed and low to no use of hormones and antibiotics.Aquadea is one of these farms. Based in the clear, deep, fast moving waters off the coast of Corsica the pens hold way less than the regulation maximum fish per square metre. The fish have to work hard in the strong currents and are not over fed. This produces a near natural fish, healthy, not overly fatty and most importantly, very tasty.
