SUPER FRESH, EVERY DAY
Our produce comes in daily from a number of regional fish markets and fishermen around the UK. Most of our catch is from small day-boats and some of it arrives at the shop within as little as 6 hours of being caught. We don’t own a freezer.
24 HOUR STOCK ROTATION
We aim to turn around all our fresh stock within one day. If we don’t sell it the day it arrives or use it on our evening menu or it goes into our bespoke dry-ageing cabinet.
We follow industry guidelines and speak to fishermen daily to keep as up to date as possible with which species are most abundant and sustainable and ensure we never stock anything that is widely considered endangered.
We avoid single use plastic as much as possible in our packaging. If you can help us in our quest to become entirely plastic free, please get in touch!
