We are very excited to announce a new, interactive seafood experience at our London base of operations in Hackney. Join chef and fishmonger Michael Harrison for practical classes in fish sourcing, preparation and cooking using the freshest fish in London. We bring the catch to the classroom in under 24 hours so you can learn to prepare and cook fish from scratch in a series of hands-on classes, for all levels.
Michael spent the early years of his career cooking in some of the best restaurants in the world where he learned the value of great ingredients and the importance of handling them properly. He has travelled around the world, exploring how different chefs work with fish and learning from master fishmongers and industry experts.
At TSTS Seafood School we start with the basics. In our state of the art cutting room you will learn how to clean and prepare different kinds of seasonal fish and shellfish. All the prep is done by you, 100% hands on, with Mike guiding you. Then you will move to our fully equipped restaurant kitchen to learn key culinary skills, working with Mike to cook a series of dishes, highlighting the quality and freshness of the fish you have just prepared.
You will learn essential techniques and skills for preparing fish and have the chance to cook alongside a professional chef with sixteen years of experience. You will also learn all about how to source and select great fish, about the seasonality of seafood, the importance of traceability and how to eat fish sustainably. You will leave armed with new recipes and ways to prepare and cook fish at home with confidence and finesse.

TSTS Seafood School
Introduction to Fish & Seafood
Class length: approx. 3 hours
This class is for people who already have basic cooking skills. For example, we will not teach you how to peel and chop an onion or cook potatoes. We will focus on fish preparation and fish related cooking techniques (but that does not mean you will not learn more about cooking in general). Prior experience working with fish is not required.
Your teacher will discuss each species you will be working with, demonstrate techniques and then guide you through the process. Cooking will be done as a group with varying levels of participation. There will be plenty of food throughout the class which will culminate in a shared, substantial meal.
