Born and raised in Essex, he started his career at 15 at Michelin-starred L’autre Pied, then worked at Dabbous, in France, at A.Wong and Brat in London, in San Francisco and Mendocino, and is now head chef at Strakers on Golborne Road.

Classically trained in Michelin kitchens, Guillaume Gillan, known for his French Mediterranean cuisine with a modern twist, has transitioned from fine dining at Bokan to running a gourmet food truck and chef's table in London.
