Having cooked in some of East London's most exciting kitchens such as Sager & Wilde, The Laughing Heart and Silver Lining, Joshua has spent the last 6 years as a nomadic residency chef, popping up at 107 (formerly P Franco), Renegade, Half Cut Market, Brunswick House to name a few. His food has a base of modern French techniques with flavours from Spain & Portugal. A strong focus on fermenting and preserving, while letting the ingredients themselves shine through.
